Cheddar Ale Soup

This rich, cheesy soup is perfect for easy entertaining or a casual weeknight dinner. Pale ale makes a delicious addition to this soup, as it is light enough to cook with but adds a depth of flavor.

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 3 cloves garlic, finely chopped
  • 3 tbsp all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 cups chicken broth
  • 1 cup pale ale
  • 1 cup Gehl’s Supreme Cheddar Cheese Sauce
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/4 cup shredded aged Cheddar cheese
  • 1/4 cup sliced green onion

Directions

  1. Melt butter in large saucepan set over medium heat; sauté onion and garlic for 3 to 5 minutes or until onion is tender. Sprinkle with flour, salt and pepper; cook, stirring for 1 minute.
  2. Add chicken broth and pale ale; bring to simmer. Stir in cheese sauce, mustard and Worcestershire sauce. Reduce heat to medium-low; simmer for 13 to 15 minutes or until slightly thickened and fragrant.
  3. Divide soup among 4 bowls and sprinkle with Cheddar and green onion.
