Jalapeno Cheddar Enchiladas

Adding some flair to your table doesn’t have to take long – make your prep easy by picking up a cooked rotisserie chicken from the grocery store.

Ingredients

  • 3 1/2 cups Gehl’s Premium Jalapeno Cheese Sauce, divided
  • 2 cups shredded cooked chicken
  • 1 1/2 cups shredded Cheddar cheese, divided
  • 1 large red pepper, diced
  • 1 small red onion, diced
  • 2 tsp taco seasoning
  • 8 medium corn or flour tortillas
  • 1/4 cup sour cream
  • 1 tbsp chopped fresh cilantro

Directions

  1. Preheat oven to 375°F. Lightly grease 13- x 9-inch glass baking dish; set aside.
  2. Combine 1 1/2 cups cheese sauce, chicken, 1 cup Cheddar, red pepper, onion and taco seasoning. Divide mixture evenly among tortillas. Roll up to enclose filling.
  3. Arrange filled tortillas in baking dish. Top with remaining cheese sauce and Cheddar. Bake for 15 to 18 minutes or until filling is heated through, sauce is bubbly and cheese is melted and golden.
  4. Drizzle sour cream over enchiladas and sprinkle with cilantro before serving.
