Cheesy Reuben Mac & Cheese

This fun mash-up of mac ’n’ cheese and a Reuben sandwich is quick and easy to prepare to order.

Ingredients

  • 2 cups cubed day-old rye bread
  • 2 tbsp melted butter
  • 1 tbsp minced garlic
  • 12 oz elbow macaroni
  • 2 tbsp canola oil
  • 2 cups chopped sliced pastrami
  • 1/2 cup sauerkraut 
  • 1/2 cups Gehl’s Beer Cheese Sauce
  • 2 tbsp finely chopped fresh chives

Directions

  1. Preheat oven to 400˚F. Toss together bread cubes, melted butter and garlic. Arrange in single layer on parchment paper–lined baking sheet. Bake for 8 to 10 minutes or until golden brown and toasted. Let cool completely.
  2. Cook pasta according to package directions. Drain, reserving 1/4 cup cooking liquid.
  3. Meanwhile, heat oil in large skillet set over medium heat; cook pastrami and sauerkraut for 3 to 5 minutes or until heated through. Add pasta and pasta water, tossing to coat.
  4. In microwave-safe bowl, microwave cheese sauce on High for 1 to 2 minutes or until warm (do not boil). Stir often. Toss with pasta mixture. Sprinkle with croutons and chives.

  • Cook pasta ahead and blanch to order

  • Substitute corned beef for pastrami
