Southwest Mac 'n Cheese

Featuring chorizo sausage and flavored with cumin, this mac ‘n cheese is definitely a crowd-pleaser.

  • 1 lb penne
  • 2 tbsp canola oil
  • 1 lb raw chorizo sausage, casing removed
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/4 tsp each salt and pepper
  • 3 cups Gehl’s Queso Blanco


  1. Preheat oven to 400˚F. Cook pasta according to package directions. Drain, reserving 1/2 cup cooking liquid.
  2. Meanwhile, heat oil in large skillet set over medium heat; cook chorizo for 5 to 8 minutes or until starting to brown. Stir in onion, red pepper, garlic, chili powder, cumin, salt and pepper; cook for 3 to 5 minutes or until chorizo is cooked through and vegetables are tender.
  3. Stir together pasta, cooking liquid and Gehl's Queso Blanco until well coated. Stir in chorizo mixture. Transfer to greased 13- x 9-inch baking dish; bake for 10 to 15 minutes or until golden brown and bubbly.
