Buffalo Chicken Mac & Cheese

Prepared with Queso Blanco and spiced with Buffalo hot sauce, this ooey-gooey mac ‘n’ cheese is baked until golden brown and bubbly.

  • 1 lb macaroni
  • 2 tbsp canola oil
  • 1 lb boneless skinless chicken breasts, cubed
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 1 carrot, diced
  • 1/2 tsp each salt and pepper
  • 2 cups Gehl’s Queso Blanco
  • 1 cup Buffalo-style hot sauce


  1. Preheat oven to 400˚F. Cook pasta according to package directions. Drain; reserving 1/2 cup cooking liquid.
  2. Meanwhile, heat oil in large pot set over medium heat; cook chicken, onion, celery, carrot, salt and pepper for 8 to 10 minutes or until chicken is cooked through and vegetables are tender.
  3. Stir in Gehl's Queso Blanco and hot sauce; bring to boil, then reduce heat to low. Stir in pasta and reserved cooking liquid until coated. Bake for 10 to 15 minutes or until golden brown and bubbly.
