Southwest Mac 'n Cheese
Featuring chorizo sausage and flavored with cumin, this mac ‘n cheese is definitely a crowd-pleaser.

1 lb penne
2 tbsp canola oil
1 lb raw chorizo sausage, casing removed
1 small onion, diced
1 red bell pepper, diced
1 clove garlic, minced
1 tsp chili powder
1 tsp ground cumin
1/4 tsp each salt and pepper
3 cups Gehl’s Queso Blanco
- Preheat oven to 400˚F. Cook pasta according to package directions. Drain, reserving 1/2 cup cooking liquid.
- Meanwhile, heat oil in large skillet set over medium heat; cook chorizo for 5 to 8 minutes or until starting to brown. Stir in onion, red pepper, garlic, chili powder, cumin, salt and pepper; cook for 3 to 5 minutes or until chorizo is cooked through and vegetables are tender.
- Stir together pasta, cooking liquid and Gehl's Queso Blanco until well coated. Stir in chorizo mixture. Transfer to greased 13- x 9-inch baking dish; bake for 10 to 15 minutes or until golden brown and bubbly.
