Cheddar Croque Madame

Warm and cheesy, these classic French sandwiches make for perfect brunch entertaining.

  • 2 tbsp Dijon mustard
  • 8 slices egg bread, about 1/2-inch thick
  • 4 slices Black Forest ham
  • 2 1/2 Cups Gehl’s Cheddar Cheese Sauce
  • 2 tbsp butter, divided
  • 4 fried eggs
  • 1 tbsp chopped fresh parsley


  1. Spread mustard over 4 slices of bread; top each with 1 slice ham and 1/4 cup Cheddar Cheese Sauce. Cap with remaining bread.
  2. Melt 1 tbsp butter in large skillet set over medium heat; cook, in batches, for 2 to 3 minutes per side or until golden brown. Add remaining butter to skillet; cook remaining sandwiches.
  3. Heat remaining cheese sauce in microwave for about 30 seconds or until heated through (do not boil). Top each sandwich evenly with remaining sauce and fried egg. Sprinkle with parsley before serving.
