BBQ Chicken Flatbread

This easy appetizer comes together in a snap. Prepared flatbread is a great way to save some time (and dishes!) when cooking. Various styles and flavors are available, and can typically be found in the bakery section of your supermarket.

Ingredients

  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 2 onions, thinly sliced
  • 1 tbsp red wine vinegar
  • 1 pkg plain prepared flatbread
  • 1 cup Gehl’s Premium Jalapeno Cheese Sauce, divided
  • 1 cup chopped cooked chicken
  • 1 small jalapeno pepper, seeded and diced
  • 1/2 cup shredded Cheddar cheese
  • 2 tbsp barbecue sauce

Directions

  1. Preheat oven to 400°F. Line baking sheet with parchment paper; set aside.
  2. Melt butter in large skillet set over medium heat; add sugar and cook for about 1 minute or until starting to melt. Add onions; cook, stirring, for 15 to 18 minutes or until tender and deep golden color. Add vinegar; cook for about 1 minute or until almost all liquid has evaporated. Set aside.
  3. Place flatbread on prepared pan. Spread with 3/4 cup cheese sauce; top with chicken, jalapeno and some of the caramelized onions (remaining onions can be covered and refrigerated for up to 2 weeks). Sprinkle Cheddar evenly over top. 
  4. Bake for 8 to 10 minutes or until heated through and cheese is melted. Drizzle with barbecue sauce and remaining cheese sauce. Let cool slightly.
