Cheesy Breakfast Hash

This chorizo and red pepper hash topped with a satisfying cheese sauce is a hearty bowl that’s perfect for breakfast, brunch or lunch.

Ingredients

  • 2 tbsp canola oil
  • 1 tbsp butter
  • 2 chorizo sausages, chopped (4 to 6 oz each)
  • 1 cup diced onions
  • 1 cup diced red pepper
  • 2 jalapeño peppers, seeded and diced
  • 1 pkg (1 lb) prepared hash brown potatoes
  • 1/2 tsp each salt and pepper
  • 1 cup Gehl’s Premium Sharp Cheddar Cheese Sauce
  • 6 eggs, fried
  • 2 tbsp finely chopped fresh parsley

Directions

  1. Heat oil and butter in large skillet set over medium heat; cook sausages, onions, red pepper and jalapeños for 3 to 5 minutes or until slightly browned. Stir in potatoes, salt and pepper. Cook for 5 to 8 minutes or until potatoes are slightly softened.
  2. Meanwhile, in microwave-safe bowl, microwave Gehl's Beer Cheese Sauce on High for 30 seconds. Stir. Repeat until warm (do not boil). 
  3. Serve hash with cheese sauce and fried egg; sprinkle with parsley.
